Although summer has taken its time reaching us this year, my craving for fresh cold fruits and vegetables hasn't been put off by the lack of heat. The Farmer's Markets in Central Washington are the perfect place to get the fresh ingredients for this salsa recipe from Karl Koester at Four Lakes Winery. Prep time: 30 minutes
Marinating time: 12 hours (optional)
Serves 10
6 large diced tomatoes
1/2 cup diced garlic
1 diced jalapeño
1/2 cup chopped cilantro
3/4 cup chopped onions
1/4 cup chopped leeks
1/4 cup chopped scallions
2 cups chopped cabbage
Juice from two limes
1-1/2 tablespoons salt
Dash of pepper
Mix all ingredients together in large bowl. Add any other of your favorite fruits or vegetables, such as carrots, peaches or nectarines.
Serve fresh or let sit overnight in the refrigerator to let the flavors come together.
Serve with chips or tostadas.
